This is a firm spicy favourite in our house, even Little Miss loves it.
- Tomato Puree
- Cayenne Pepper
- Ground Coriander
- Tinned Tomatoes
The curry paste first. Peel then finely grate the ginger.
Mince the garlic and add it to the ginger.
Then the spices.
And the tomato puree. Ideally you would sling this into a food processor and blitz to mix. I don't have one so I give it a good mash with a fork.
Chop then onions and fry them in a little oil.
Chop and add the chillies.
And the peppers.
Then add the curry paste and fry for a few minutes.
Add the mixture to a slow cooker and leave it on low for the day.
We have it with rice and some extra veggies mixed in.
