Chop the onions. Fry them in the oil.
Add the chopped leeks. And the stock cubes.
Chop the spuds.
Chuck them into the pot too.
Chop the bacon into little bits and fry. Sprinkle a little bacon on top to serve.
And done, super simple, tasty, healthy leek and potato soup.
